I have a freezer full of chicken tenderloins because they were on sale last week, so I bought 10 packages. If I remember, those totaled almost 40 pounds of chicken. I used the tenderloins, but boneless breast will work just fine.

I cut a package of chicken tenderloins into quarters then I beat them with a mallet so they would be thin. You don’t want to beat the chicken too many times since it will become too thin. One package of tenderloins made 6 sandwiches.

Philly Cheese Chicken Sandwich

Ingredients:

  • 1 package breast tenderloins or 3-4 boneless chicken breasts

  • 3 Tablespoons oil

  • 1 onion sliced

  • 1 bell pepper slice

  • 6 slices of provolone cheese

  • 3-4 Tablespoons butter

  • 1 package Deli Style sandwich buns

Directions:

Wash chicken and place in a zip top bag or wrap in plastic wrap. With a mallet, beat several times until the chicken starts to break down and become thin.

In a hot skillet, add the oil. Place chicken in the pan and cook until most of the pieces are cooked through. Add the onion and bell pepper and cook until soft and the onions are translucent. Turn off the heat.

Divide the meat and vegetables into servings and top with cheese. Cover with a lid until the cheese melts.

On a griddle or in a clean skillet, melt butter and place opened sandwich buns down and brown until golden. Spoon chicken mixture onto the bottom half of the bread and place the top portion of the bread onto the sandwich. Serve.
