Pork Chops and Potatoes are a favorite dish in my kitchen. Seventeen years ago, my little kindergarten class made a cookbook to give their moms for Mother’s Day that year. Believe it or not of all the classes I ever taught, this group of parents was on top of things. When I sent the note home asking for a family favorite recipe, they started rolling in the next morning. If I remember correctly, I did not have to send any reminder notes about the recipes. During my classroom teaching years, I had several classes make a cookbook. Each recipe I have cooked over the years, some being cooked more than others because they have become a family favorite for us.

This recipe is one of those favorites and it came from a family who had two boys; the youngest being named Paul. I had the privilege to teach both boys, the older one in third grade and the younger in kindergarten. They are now out of college married and serving in their church.

This recipe is quick and easy to put together on busy nights. All the cooking is done in one dish unless you make your own cream of mushroom soup.

The cooking time will depend on the thickness of the pork chops. I usually buy thinner chops, to help keep the cooking time down. My grocery store usually only has packages of 4 boneless pork chops, so you can always adjust a number of ingredients for your needs.

I also tend to use more potatoes because my husband and son love them cooked in the soup. I used six potatoes last week when I made this recipe.

Paul's Pork Chops and Potatoes

Ingredients:

  • 4 - 6 potatoes sliced

  • 4 boneless pork chops

  • 1 small onion sliced

  • 1 can cream of mushroom soup (I use homemade)

  • ¾ can milk (soup can)

  • 2 Tbsp butter melted

Directions:

Preheat the oven to 375 degrees. In a baking dish pour butter. Layer the dish with potatoes, pork chops and onions. In a small bowl, mix together soup and milk and pour over the meat and vegetables. Cook at 375 for about 45 minutes or until pork chops are no longer pink.

**I don’t add the ¾ can of milk when using homemade soup.
