Easy Chicken Pot Pie

I love a good Chicken Pot Pie. Not the kind baked in a pie plate with a crust on the bottom because those remind me of the little-frozen pot pies I’d eat as a kid. I’m talking about the kind where there is no crust underneath all that yummy goodness. This recipe, I like to call One of Everything Chicken Pot Pie, because basically it consists of one of each item. A recipe that is easy to remember.

When I was first married I brought a cookbook into our marriage that I bought on my travels to a teacher’s convention. Since we were taking the back roads to Savannah, Georgia, and back home, I drove because I knew the way. On the way home that Saturday, we stopped at my all time favorite BBQ restaurant. While we were there I picked up a cookbook that was being sold as a fundraiser for the local school. To this day, it is still my favorite cookbook.

In the book was a very simple chicken pie with no crust on the bottom. I loved how the recipe only called for 1 chicken and 2 cans of cream soups. The crust was similar to the one that my great aunt would make. I can still remember were her chicken pot pies and how there was never any left in the dish at our reunions.

Over the years I did make a few changes to the original recipe and now that I’m writing about it, I may have to give the original another try because I remember how good it was as it is written.

CHICKEN POT PIE

Ingredients:

  • 1 chicken cooked and shredded – reserve the broth

  • 1 can cream of chicken soup or HOMEMADE

  • 1 soup can of chicken broth

  • 1 large can mixed vegetables, drained

CRUST:

  • 1 cup of self-rising flour

  • 1 cup milk

  • 1 stick of butter melted and cooled

Directions: 

Preheat oven 350 degrees. In a large bowl, mix together chicken and vegetables. In a medium bowl, mix soup and broth together and whisk until smooth, pour over chicken. Pour into a 9x13 baking dish.

Crust:

Whisk flour, milk, and butter together until there are no lumps. Pour mixture over chicken and bake for one hour.

This recipe is SO easy to make, it has become a tradition for me to give a copy of the recipe at bridal showers. All new brides need recipes and I know new husbands appreciate them just as well.
